Ginger Beer

8oz (1 cup) fresh ginger root 

1 liter (4 cups) bottled or distilled water 

2oz (1/4 cup) lemon, lime juice combined (or to taste), up to 4 ounces

1/2 cup brown sugar, 1/4 cup (or to taste) white sugar

 

Peel and cut the ginger into pieces, place into food processor (or blend) with a 1/2 cup of water. Process for about 1 minute

Pile into large glass container with the remaining liter of water. Cover (not tightly) and store in a cool place for 5 to 15 hours

Strain beer into large pitcher or bowl, add lemon, lime and sweeten to taste. Return mixture to the large glass container, cover again and refrigerate. 

To serve when ready pour (over ice) with lemon, lime or grapefruit as garnish
